Correct, you miss the timing and cannot activate the effect of "Pinch Hopper" or "Fortune Lady Light". You destroy the monster, and then you add the other monster to your hand. The last thing to happen is not the destruction of the monster, so you cannot activate those effects.

Note that this only applies to optional "When...you can..." effects. The effect of "Sangan" is mandatory, so it will always activate.
