I have a simular deck to this. Though you want all monsters, you should still add at least a Giant Trunade and a Cold Wave, these two cards are a must. Witch of the Black Rose is also a must in threes, you will almost always draw a monster. Here's my version of the deck, you can borrow any ideas you like:

Well I can't summon Zeman since I don't keep Gallis. You should have some milling power like Ryko, Lightsworn Hunter, since the deck works off the Graveyard. Quickdraw Synchron can also make some crazy combos with Dandylion and Gallis the Star Beast to make Junk Destroyer or Drill Warrior. Hmm maybe get rid of the Yubels since they are pretty slow. The Giant Rats, Mystic Tomatoes, Crusader of Endymion, Armageddon Knight and Necroface seem out of place here. They can easily be replaced. Alright, I only can removed Yubels, Rats, Crusader. But I cannot removed Mystic Tomatoes, Knight and Face since they're more helpful for the situation. Arm Knight is good reason because of Plaguespreader Zombie, and easily Brionac Summon. So since Yubels are out of way, I can be safely removing the Lotus for Level Eater as you asked.
